Serving our roasted chicken with cider without a worthy side dish would be a shame. That’s why we made this amber saffron mashed potatoes 🙂 .

Mashed potatoes is a classic side dish we love so much; for Christmas lunch we wanted to change it a bit , replacing the black pepper and nutmeg, with saffron and crushed All spice (just a pinch but not to cover the scent of saffron 😉 ).
The saffron won’t only perfume your kitchen while you’ll be preparing the dish, but it also gives a beautiful amber color to the potatoes making it perfect for the festive atmosphere 😀 .

Saffron mashed potatoes

Ingredients

  • 12 potatoes the best type are the ones with white paste
  • 350 ml fresh milk
  • 3 tablespoons of butter
  • 2 sachets of saffron preferably stigmas
  • all spice for garnishing
  • salt

Instructions

  1. Boil the potatoes in salted water, whole and unpeeled, for 25-30 minutes. Check the cooking with a fork.
  2. While waiting for the potatoes, mix the milk, butter, salt and saffron and heat the mixture.
  3. Drain the potatoes and mash them within the same cooking pot, so they will remain hot.
  4. Add the milk to the potatoes, then with a wooden spoon, beat the potatoes vigorously to combine the ingredients.
  5. Serve warm garnished with ground all spice.
