Spicy mulled white wine eggnog

Could we leave you without a sauce with which to enjoy the panettone? Absolutely not! Eggnog, you know, it is traditional in this time of year, but we wanted to give it a new flavour that connected it to Christmas even more 🙂 ! So we’ve added some spices to the traditional recipe… And the Spicy mulled white wine eggnog was born.

Firstly this recipe will show you how to make mulled wine at home, the main ingredient for our eggnog. For convenience, we have marked the doses to 750 ml of wine, but remember that for a portion of eggnog will need only 50 ml of vine. Never mind, if you’ll not use all the wine to prepare this sweet cream… For surely the mulled wine will not be wasted 😀 .

If you prefer a more compact cream, use a still white wine, if you want it more soft and fluffy, a sparkling wine. Take your choice! 🙂

Spicy mulled white wine eggnog

Ingredients

For mulled wine

  • 750 ml sparkling or still white wine
  • 120 g of sugar
  • 1 teaspoon cinnamon
  • 8 cardamom seeds
  • zest of one biologic orange
  • zest of half biologic lemon
  • half vanilla pod
  • 3 cloves
  • 8 seeds of all spice

For the eggnog per serving

  • a yolk
  • a spoonful of sugar
  • 50 ml of spicy mulled wine

Instructions

For the mulled wine

  1. Start pouring the wine of your choice in a large pot, then add sugar.
  2. Coarsely crush cloves, all the spice and cardamom, extract the seeds from vanilla and add all the spices to wine.
  3. Bring to a boil and simmer for 5 minutes, just long enough for the spices to infuse. Then, set aside.

For the eggnog

  1. Whisk the egg yolk with the sugar; add 50 ml of warm spicy wine.
  2. Cook in a water bath for 2 minutes, stirring constantly with a whisk. Eggnog will be ready as soon as it begins to thicken. Be careful not to overcook, or you'll ruin it.
