Even if it snows and we are (still) in winter, we’ll present you a dessert with fruity taste and spring mood: a caramelized pineapple mousse made with ricotta cheese and perfumed vanilla seeds. This pineapple mousse, light and quick to prepare, is excellent served on its own, or also accompanied with a slice of freshly baked cake .
Preparing the mousse, you just have to have patience to caramelize the pineapple at the right point, so that the caramel aroma will become intense and recall the typical taste of Dulche de Leche.

Caramelized pineapple mousse with vanilla

Ingredients
- 250 g of fresh pineapple
- 30 g of brown sugar
- 45 g of muscovado sugar
- 100 ml of fresh cream
- 200 g of ricotta cheese
- 1/2 vanilla pod
Instructions

Dice the pineapple, mix it together with the sugar and the vanilla seeds.

Let it caramelize in the pan, turning it occasionally; you'll need about 10-15 minutes to caramellize at the right point.

Turn off the heat and let cool your pineapple before mixing it with ricotta cheese.

Whip the cream and add it delicately to the other ingredients.

Divide into four bowls and let rest in refrigerator for 30 minutes before serving.
