Review of Torta 900 by Balla

We decided to inaugurate this new section of our blog reviewing a legend of northern Italian pastry: the TortaĀ 900 by Balla, Ivrea šŸ™‚ .

No oneĀ precisely knows the recipe for this dessert, created and patented by the Italian pastry chef Bertinotti at the end of the nineteenth century, although many have tried to prepareĀ it … And to be honest, we had too. But more about that next time šŸ˜‰ . The Torta 900 isĀ be a sponge cake stuffed with chocolate mousse.

Review of Torta 900 by Balla

A few days ago, we were in Ivrea and decided therefore to personally tasteĀ the famousĀ cake.Ā The locationĀ was well designed, clean and refined, and we have been welcomed with smiles and kindness… And this is not something that always happens! šŸ˜‰ To be honest, we did not stop and admire all the preparations in the fridges: we were there for one reason only.
After a couple of minutes, the waitress serves us the Torta 900 cake. Very nice, indeed, and well presented. And in truth, different from what we would have expected. It was not a “normal” slice, in which the inner cream is “sectioned” along with the sponge cake, but a triangle of sponge cake cut and stuffed with chocolate mousse. Initially we were a little worried that the sponge dough, not having had time to soften, would be dry. But we must say that Balla is not Balla by chance and after the first taste all ourĀ doubts dissapeared. The sponge cake was soft, fresh and delicate, and the filling was creamy and had the same freshness. Seriously, a perfect and refined dessert.

The only flaw of Balla is the fact that the it closes atĀ 13 for lunch and then, after ten minutes we had toleave… And yes, despite the short amount of time, the cake was already gone šŸ˜‰ .

In summary, we’ll give Pasticceria Balla ofĀ Ivrea and its Torta 900 four and a half stars out of five, because of the care of the location, the presentation of the dessert and the kindness of the staff. Let’s face it, there are few bakeries that really maintain a very high level over the years šŸ™‚ .
