Sweet carnival masks

Today’s reicpe is a cake that surely most of you know or have at least noted in bakeries in this period: the sweet Carnival masks 🙂 .maschere dolci di carnevale

It is a soft dough that is shaped into a mask-form that recalls of the Carnival. The dough is scented with vanilla and lemon and sprinkled with butter and sugar before being baked.

The preparation will seem long because the dough needs to rise, but not overly difficult and your actual time behind the stove will be very little … For once, let’s the yeast work for us! 🙂 The carnival mask is a dessert that satisfies everyone’s tastes and surpries friends, so if you have some free time, prepare it! : D

Sweet carnival masks

Ingredients

  • 250 g of flour 00
  • 250 g of Manitoba flour
  • 1 teaspoon of brown sugar
  • 12 g of fresh yeast
  • 200 g caster sugar
  • 100 g butter softened
  • 2 eggs and 2 egg yolks
  • peel of 1 lemon
  • vanilla
  • 2.5 g of salt

Instructions

  1. Dissolve 10 grams of yeast in some warm milk (about 30 ml) with a teaspoon of sugar. This will help the dough rise. Add 100 grams of sifted flour and knead a few minutes. You should get the dough of a bread. Let rise one hour in a warm place.
  2. Add 200 g of flour, 2 g of yeast, 100 g sugar, 2 eggs and 50 grams of softened butter to your dough. Knead again and let rise one hour and a half. The dough will be a little sticky, but this is right 😉 .
  3. Add the remaining 200 g of flour, 100 g of sugar, 50 g butter 2 egg yolks, lemon, vanilla seeds and salt. Mix and add a little flour if the dough is still too soft, but be careful not to exaggerate: the dough should be still slightly sticky. Let rise another hour and a half in a warm place.
  4. Divide your dough into four loaves, and lay them on a baking sheet lined with parchement paper. With a lightly floured rolling pin, roll out the dough, to bring it up to about two fingers thick.
  5. Then, with the help of a pastry cutter or a knife, cut the eyes and mouth; with the leftover dough, made the nose and attach him on the face.
  6. Let rise another hour and a half in the oven. Finally, brush with melted butter and sprinkle generously with brown sugar.
  7. Bake in preheated oven at 180°C for about 35 minutes. Now you just need to enjoy your sweet carnival masks, preferably still warm 😀

Notes

It’s very important to let the dough rise.

For optimal rising, you’ll need a warm place, about 30 degrees, where there are no drafts. Ideally the oven itself, perhaps turing only the light on; or even in a bowl covered with a cloth and placed next to a heater or stove. Take care not to overheat excessively the dough for being too close to a heat source, otherwise the yeast will die and you’ll have to restart from the beginning.
