Banana bread with chocolate chunks

To decide what propose you as our very first recipe was not easy at all! The ideas were different and confusing. An only constant: Taste! And if a recipe does not satisfy you, is there any reason you should prepare it?

It was today breakfast to suggest the choice. We will start the blog as we started the day 🙂 with a variant of the American Banana bread with wholemeal flour and sugar, a pinch of spices and chunks of dark chocolate.

The origins of the recipe come from lost in a small American town, in the early 30s… They say there was a poor housewife, with many problems due to the crisis, who invented a recipe to make some extra dollars and pay the bills… The story may be a myth, however only from 1933 the recipe for banana bread is available in a cookbook. The real boom of the recipe dates back to the war, when Chiquita brand used the recipe as an advertising medium to sell more bananas.

Banana bread with chocolate chunks

Ingredients

  • 3 bananas
  • 150 g of Manitoba flour
  • 150 g of wholemeal flour
  • 130 g of muscovado sugar
  • 50 g of demerara brown sugar
  • 1/2 teaspoon salt
  • 50 g butter
  • 80 g of yoghurt
  • 2 eggs
  • 1 packet of baking powder
  • 50 g of dark chocolate
  • 1 vanilla pod
  • 4-5 seeds of All Spice you can replace it with cinnamon

Instructions

  1. Smash the bananas with a fork or better by hand. Leave them aside.
  2. Combine the sugar, flours, salt, baking powder and mix well with a whisk metal to break up any lumps.
  3. Continuing to mix, add bananas, yogurt, melted butter and eggs.
  4. Cut the vanilla bean and extract the seeds using a knife. Grind the All Spice and add it to the mixture.
  5. If you do not have All Spice, you can replace it with the tip of a teaspoon of cinnamon.
  6. Cut the chocolate into large pieces and add them to the mixture.
  7. Butter a mould for plum-cake and pour the mixture.
  8. Bake in preheated oven at 170° for 60-70 minutes.
  9. Remove the banana bread from the mould and wrap it in a dry cloth.
  10. Although its overwhelming flavour the banana bread will tempt you, let it cool at least one hour before you taste it... The flavour will intensify!

Notes

Storage

Banana bread remains soft for several days, but usually has a very short life ;).

You can freeze it and heat it in the oven a few minutes before eating it, it will be soft and the chocolate slightly melted.

All Spice

all spiceThe Jamaican pepper is a typical spice from the Caribbean; also known by the name of All Spice, it has a delicate but very complex flavour at the same time. Apparently a mixture of cinnamon, nutmeg, pepper and cloves. It gives to the desserts that far exotic flavour that we like so much; you’ll find it in other recipes we will be posting very soon.

Muscovado sugar

zucchero integraleThis particular sugar is darker and is more humid than classic raw cane sugar (the brown one you have definitely used once at least). If you shake it, you will see it moving for some seconds, but do not worry, he is not alive :p the effect is caused by its particular texture. But let’s get to the fundamental constant: the muscovado sugar has a very pronounced molasses taste and has a softer sweetens. We will use it not only in the desserts, but also in oriental sauces, dishes or tagines… Go and look for it at the supermarket, you will certainly need it :).
