Since peppers seems to be one of our favorite vegetables, and that you have enjoyed the quiche with tuna and sweet peppers, we decided to dedicate a new quiche to these fantastic and colorful vegetables. A tasty variation with mountain flavor… The quiche with speck and sweet peppers 😉 !
This quiche is a faithful companion of many trips… We brought it with us in our last trip to Annecy. Waiting for spring and the first picnic, this quiche is great for a snack or meal with friends 😉 .

Quiche with speck and sweet peppers

Ingredients
- 1 kg of sweet peppers
- 125 g of speck
- 1 large onion
- 3 eggs
- salt
- black pepper
- chives
Instructions

Finely chop the onion and fry it.

Dice peppers and add to the onions.

Add salt, spices and cook for about forty minutes, until the peppers are softened and will have lost much of their water. Leave aside to cool down.

Add the eggs, peppers and speck cut into small pieces.

Roll out the dough into a baking dish and pour in the filling.

Bake in oven at 200 °C for 40-45 minutes.
