Strawberry tiramisù

As spring is approaching, we have decided to create a fresh and fruity variant to a classic of the Italian cuisine: strawberry tiramisu! Easy and quick to prepare, it is perfect for a snack after consuming too many calories during a walk in the warm spring sun; and if the weather is cold and windy, it does not matter:  you will certainly find a good excuse to enjoy it! 🙂

Strawberry tiramisù

Ingredients

  • 200 g ladyfingers
  • 400 ml whipping cream
  • 50 g icing sugar

Strawberry compote

  • 500 g strawberries
  • 100 g sugar

Cream

  • 500 g mascarpone cheese
  • 150 g sugar
  • 4 egg yolks
  • 4 egg whites

Syrup

  • strawberry syrup
  • water

Instructions

Strawberry compote

  1. Wash your strawberries, remove the leaf and put them into a pot with sugar and a little water.

  2. Cook over low heat until they have softened and they lost excess water; it will take about 15 minutes. Let it cool.

Cream

  1. Whisk the egg whites with a few drops of lemon juice.
  2. Gently add the sugar while continuing to whisk the egg whites.

  3. Finally incorporate yolks and mascarpone cheese.

Composition

  1. Add the syrup to the water, depending on your personal taste

  2. Dip the ladyfingers in the syrup and place a first layer into the cups.

  3. Add the cream followed by the strawberry compote; then repeat for a second layer.

  4. Whip the cream with icing sugar and using a pastry bag decorate the top of your small tiramisu.

  5. Decorate with some fresh strawberries.
