Last week, in the recipe of cherry jam, we mentioned other recipes with cherries 🙂 . So today we’ll show you another way to preserve these wonderful fruits, they’ll be perfect to decorate and flavor cakes throughout the winter… Candied cherries 😀

The preparation of candied cherries is a bit different from that of oranges, because you cannot cook cherries hours, as they would melt and break into pieces, instead you must cook about ten minutes then leave it all to cool and rest 🙂 . A little patience and after about 24 hours you will have your delicious candied cherries 😀

Candied cherries

Ingredients

  • 500 grams of cherries already cleaned and stoned
  • 1 kg of sugar
  • 750 ml of water
  • 1 vanilla bean
  • 1 pinch of salt

Instructions

  1. Wash the cherries and remove core and stem.
  2. In a large pot, better if you're using a large one with high sides in order to avoid any spillage, add sugar, salt and water. Heat until sugar is completely melted.
  3. Add the cherries and vanilla seeds.
  4. Remove the lid of the pot, bring to a boil until the fruits starts to form a dense foam, continue to cook over medium heat for 10 minutes. Turn off, cover the pot and let stand 8 hours.
  5. After this time, repeat the process, and wait another 8 hours.
  6. Now we have a final step, bring to a boil until the candied cherries will be beautiful glassy and transparent (it will take 10-15 minutes).
  7. Pour into a jar together with the syrup, in this way they will remain soft for several months, and let cool.
