Every main course has to be accompanied by a worthy side dish . And today we’re presenting a fresh salad with unusual combination of flavors: a fennel crudité enriched with cailletier olives and sweetened by orange and raisins.
In this dish we wanted to revive some flavours typical of winter and of Christmas time. We approached the delicate bitterness of the olives to orange and raisins to enhance the flavour. You’ll judge!

Cailletier olives and citrus salad

Ingredients
- 4 fennels
- 3 oranges
- 150 g of cailletier olives
- 2 handfuls of raisins
- black pepper
- nutmeg
Instructions

Soak your raisins in warm water.

Thinly slice the fennels.

Peel the oranges, cut into cubes and add them to the fennels.

Squeeze the raisins and add to salad with olives.

Finally, season with oil, salt, a pinch of black pepper and nutmeg.
