Today we’re going to present a dessert of Romanian origin: Învârtită cu nucă, a walnut cake rolled up on itself. The Învârtită is certainly a very scenic and tasty dessert, yet simple to prepare. The first time we’ve tried it, we marveled: it is a slightly sweeten bread dough, which encloses chopped walnuts and brown sugar, no spices at all; but the taste is so intense, the perfect way to start a day with an healthy breakfast .
We have not been to Romania yet, but we tasted this not very far from home… At Koru Kafé in Aosta, a small bar in via Monte Grivola. Învârtită cu nucă - Romanian walnut cake
Ingredients
For the dough
- 350 g of flour
- 150 g of Manitoba flour
- 1/2 teaspoon of salt
- 2 tablespoons of brown sugar
- 15 g of fresh yeast
- 250 ml of water
For the filling
- 250 g of nuts
- 150 g of brown sugar
Instructions
For the dough

Combine the flour, sugar, salt and yeast;with a whisk break all the lumps.

Add the water, a little warmed up, a bit at a time until you get a bread dough consistency. Cover with a cloth and let rise for one hour.
For the filling

Chop the walnuts and mix them with sugar.
Composition

Divide the dough into two halves, roll it out in a very thin rectangles (about 35 cm * 25 cm).

Sprinkle the dough with the walnut filling.

Wrap them from the longer side, and place the two rolls in a baking pan forming a spiral (the second roll must start where the first ends).

Brush the surface of the cake with the oil, preferably rice or seeds; sprinkle with brown sugar.

Bake the Învârtită at 180 °C for 40 minutes.

Once ready, remove it from the pan and let cool covered with a cloth.
